After attending my cousin’s wedding, where her Mom made the cake, my Mom was inspired. By the time we left the reception she was making plans and working on recipes for our cake. After many taste testings we ended up agreeing on three different layers; Lemon, Coconut and Red Velvet. My Mom slaved away on our cake and it turned out incredible! So incredible, that we often find ourselves coming back to the these recipe’s whenever we have a sweet tooth.

The recipe for the Lemon and Red Velvet Cake calls for a basic box cake with some additional ingredients- Pudding Mix and Dream Whip! It’s literally the simplest recipe where you mix the dry ingredients plus eggs and water. 


For the frosting, we use a recipe from Amber at Dessert Now, Dinner Later. It is a delicious butter cream cheese frosting that is equally as simple. I typically don’t love frosting, but this recipe has become our go to and is the perfect addition to any cake!

The Perfect Red Velvet Cake

The easiest Red Velvet Cake recipe that melts in your mouth! This cake is fluffy and moist perfect for any occasion!

Ingredients
  

Cake

  • 1 Box Red Velvet Cake Mix (Duncan Hines brand preferred)
  • 1 Packet Dream Whip
  • 1 Packet Red Velvet Jello (can substitute chocolate)
  • 3 Eggs
  • 1 cup Water

Frosting

  • 8 oz Cream Cheese Softened
  • 1/2 cup Unsalted Butter Room Temperature
  • 1 cup Powdered Sugar
  • 1 tsp Vanilla Extract

Instructions
 

Cake

  • Preheat oven to 350F (325F for nonstick pans).
  • Grease sides and bottom of pan with cooking spray. 
  • Mix Cake Mix, Instant Pudding, and Dream Whip together in mixer.
  • Add eggs and water. Beat until smooth.
  • Distribute evenly in cake pans.
  • Bake for 25 minutes or until toothpick comes out clean.
  • Cool for 10 minutes before frosting.

Frosting

  • Beat cream cheese until smooth. 
  • Gradually add butter and continue beating until smooth and well blended. 
  • Add powdered sugar and vanilla. Blend until smooth and combined.

Notes

  • If you beat too long frosting will become soft. If this happens, place in the fridge until it firms up.
