This savory Veggie Beef Soup is a perfect easy weeknight meal. Not only is it delicious and savory but it is packed with nutritious veggies and sure to be a crowd pleaser!
Season beef tips with red pepper flakes, salt and pepper to taste.
In a skillet, on medium high heat, brown beef tips. Then add onion and hot sauce until meat is tender and most of liquid has evaporated.
Place the cooked beef onion mixture and remaining ingredients into slow-cooker.
Cook on high for 3-4 hours or low for 6-8 hours until potatoes are tender.

Notes
The red pepper flakes and hot sauce don't make the soup spicy, but rather add flavor to the beef and keep it tender. If you wanted to leave it out you could.
Recipe can be made over the stove. Brown the beef and onion in a large pot. Then add other ingredients and bring to a boil. Cover and reduce heat. Simmer for about 20 minutes until potatoes are tender.
