As soon as the weather starts to turn cool John and I immediately start getting excited about soup weather! I like to make soup about once a week for dinner and have perfected this Veggie Beef soup over the years. We come back to it week after week and have never gotten tired of it!

Vegetable Beef Soup and grilled cheese pairing

I like to use a mix of canned and frozen vegetables in this soup, but you could really use any that you have on hand! The biggest trick is to make sure the potatoes are cooked long enough so that they’re nice and soft.

I recommend cooking for 7 hours on low. However, I’ve also included instructions for cooking on high or on the stovetop for a shorter amount of time.

One of the tricks that makes this soup so delicious is browning the beef and onions with hot sauce. I’m not a huge fan of spicy soup, but trust me the hot sauce doesn’t add heat. It helps to tenderize the meat and pack in lots of flavor that makes this soup so savory!

Easy Slow Cooker Veggie Beef Soup

This savory Veggie Beef Soup is a perfect easy weeknight meal. Not only is it delicious and savory but it is packed with nutritious veggies and sure to be a crowd pleaser!

Ingredients
  

  • 1 lb Beef Tips
  • 1/2 Onion Chopped
  • 2 Tbsp Hot Sauce
  • 1 tsp Crushed Red Pepper
  • 2 cup Beef Broth
  • 1 qt Tomato Juice
  • 4 medium Potatoes Diced
  • 1 can Green Beans 14.5 oz
  • 1 can Corn 14.5 oz
  • 1 cup Frozen Pea
  • 1 cup Okra Chopped
  • 2-3 Carrots Sliced
  • Salt and Pepper To taste

Instructions
 

  • Season beef tips with red pepper flakes, salt and pepper to taste.
  • In a skillet, on medium high heat, brown beef tips. Then add onion and hot sauce until meat is tender and most of liquid has evaporated. 
  • Place the cooked beef onion mixture and remaining ingredients into slow-cooker.
  • Cook on high for 3-4 hours or low for 6-8 hours until potatoes are tender.

Notes

  • The red pepper flakes and hot sauce don’t make the soup spicy, but rather add flavor to the beef and keep it tender. If you wanted to leave it out you could. 
  • Recipe can be made over the stove. Brown the beef and onion in a large pot. Then add other ingredients and bring to a boil. Cover and reduce heat. Simmer for about 20 minutes until potatoes are tender.
