The recipe itself is super simple, yet packs a great flavor! First, you will pan sear the Salmon and prepare this amazing Tuscan Butter sauce. Afterwards, you simply toss the tortellini and Salmon in the sauce and enjoy!When finished, I like to serve this dinner with a simple side of garlic bread or simply on it's own. This Tuscan Butter Tortellini could also be served with other protein options, like Chicken. Either way, it's delicious and will be one you will enjoy for a long time!
Meanwhile, in a large skillet over medium-high heat olive oil. Season Salmon generously with salt and pepper. When oil is simmering but before smoking, add Salmon skin side up. Cook until golden (6 min). Flip and cook an additional 2 min. Transfer to plate and wipe out skillet with a paper towel.
Reduce heat to medium and add butter. When butter has melted, add garlic and cook for about 1 min or until fragrant. Add cherry tomatoes, green onion and season with pepper. Cook until tomatoes are bursting.
Add spinach and cook until spinach is wilted.
Meanwhile, add tortellini to boiling water and cook according to package directions.
Reduce heat to low, and stir in half and half, parmesan, almost all of basil (save a pinch for garnish) and bring mixture to a simmer. Allow sauce to simmer while cooking pasta.
Return Salmon to skillet and spoon over sauce. Simmer until Salmon is cooked through, about 3 minutes. When done, transfer back to plate.
Meanwhile, drain pasta. Add to skillet and cover in sauce.
Top with Salmon, garnish with remaining basil, and squeeze 1/4 lemon on top of Salmon.
