We love breakfast in our house! Typically, a weekend morning in our house consists of bacon, eggs, pancakes or cinnamon rolls. We eat healthy on the weekdays but like to splurge on the weekend! Since we’ve been spending so much time at home recently we’ve had a chance to add to our breakfast repertoire like this delicious French Toast! 

The French Toast in this recipe is similar to traditional recipes you’ve seen; however, I’ve added Orange Juice for an extra refreshing taste! It gives it a nice crisp after taste that is so unique and complemented perfectly by the berry compote!

You can top with the traditional syrup and powdered sugar; or better yet try greek yogurt and this incredible Berry Compote! I was inspired by HerAtlas and her delicious French Toast toppings, they have really upped our breakfast game! This Compote is so simple and can be made with Honey or Agave nectar for a wonderful, healthy breakfast addition.

French Toast with Berry Compote

The Ultimate Orange Juice French Toast with Berry Compote

Delicious crisp French Toast recipe that is complimented perfectly with berry compote and greek yogurt or traditional toppings!

Ingredients
  

French Toast

  • 4 Eggs
  • 1/3 cup Skim Milk
  • 1/2 cup Orange Juice
  • 1 tsp Cinnamon
  • 1 tsp Vanilla Extract
  • 12 Slices Toast Wheat Prefered

Toppings

  • 2 cup Frozen Mixed Berries
  • 2 Tbsp Honey or Agave Nectar
  • 2 cup Honey Greek Yogurt

Instructions
 

French Toast

  • Preheat skillet or griddle to Medium-High heat and spray with oil or coat with butter. 
  • Whisk together eggs, milk, orange juice, cinnamon and vanilla extract in a bowl. 
  • Dip the bread in the mixture, making sure both sides are coated. 
  • Place dipped bread onto skillet and cook for 3-4 minutes per side until golden brown.

Berry Compote

  • Preheat skillet or griddle to Medium-High heat and spray with oil or coat with butter. 
  • Place berries into skillet and top with honey or agave. 
  • Once bubbling, reduce heat and use a spoon to slightly mash the fruit. 
  • Remove from heat and transfer to French Toast.

Topping

  • Top with a dollop of Greek Yogurt and a spoonful of Berry Compote.
  • If you want to save the compote for later, transfer it to a jar or container. Store in the fridge and reheat to serve
