If you’ve followed me on instagram, you know that I’ve been trying all sorts of different recipes lately. Tonight, I tried a twist on a Tuscan Butter Tortellini recipe I found on delish.com and it was amazing. Seriously, you could’ve convinced me we were dining at a five star restaurant!

Tuscan Butter Salmon Tortellini Entree

I think this recipe was mostly inspired by our new Green Life pan. Seriously, this pan is amazing because it’s non-stick AND doesn’t have as many of the harmful chemicals that so many nonstick pans have. It’s literally going to be a game changer for my cooking! If you’re in the market for a new pan I highly recommend it!

Creamy Tuscan Butter sauce with tomatoes and spinach

The recipe itself is super simple, yet packs a great flavor! First, you will pan sear the Salmon and prepare this amazing Tuscan Butter sauce. Afterwards, you simply toss the tortellini and Salmon in the sauce and enjoy!

When finished, I like to serve this dinner with a simple side of garlic bread or simply on it’s own. This Tuscan Butter Tortellini could also be served with other protein options, like Chicken. Either way, it’s delicious and will be one you will enjoy for a long time!

Tuscan Butter Salmon with Tortellini Recipe

Tuscan Butter Salmon Tortellini

The recipe itself is super simple, yet packs a great flavor! First, you will pan sear the Salmon and prepare this amazing Tuscan Butter sauce. Afterwards, you simply toss the tortellini and Salmon in the sauce and enjoy!
When finished, I like to serve this dinner with a simple side of garlic bread or simply on it's own. This Tuscan Butter Tortellini could also be served with other protein options, like Chicken. Either way, it's delicious and will be one you will enjoy for a long time!

Ingredients
  

  • 2 Tbsp Olive Oil
  • 2 (6oz) Salmon Filet's Cut in half
  • 4 Tbsp Butter
  • 3 cloves Minced Garlic
  • 1 Green Onion Sliced
  • 4 cups Cherry Tomatoes Halved
  • 4 cups Baby Spinach
  • 1 1/2 cups Half and Half or Heavy Cream
  • 1/2 cup Grated Parmesan
  • 1/4 cup Basil Freshly Chopped
  • 4 cups Cheese Tortellini
  • 1/2 Lemon Wedge
  • Salt and Pepper to Taste

Instructions
 

  • In a large pot, begin to heat water for pasta.
  • Meanwhile, in a large skillet over medium-high heat olive oil. Season Salmon generously with salt and pepper. When oil is simmering but before smoking, add Salmon skin side up. Cook until golden (6 min). Flip and cook an additional 2 min. Transfer to plate and wipe out skillet with a paper towel.
  • Reduce heat to medium and add butter. When butter has melted, add garlic and cook for about 1 min or until fragrant. Add cherry tomatoes, green onion and season with pepper. Cook until tomatoes are bursting. 
  • Add spinach and cook until spinach is wilted.
  • Meanwhile, add tortellini to boiling water and cook according to package directions.
  • Reduce heat to low, and stir in half and half, parmesan, almost all of basil (save a pinch for garnish) and bring mixture to a simmer. Allow sauce to simmer while cooking pasta.
  • Return Salmon to skillet and spoon over sauce. Simmer until Salmon is cooked through, about 3 minutes. When done, transfer back to plate.
  • Meanwhile, drain pasta. Add to skillet and cover in sauce.
  • Top with Salmon, garnish with remaining basil, and squeeze 1/4 lemon on top of Salmon.

Notes

  • Could be made without pasta by halving the sauce recipe.
  • Tastes just as deliciou with chicken instead of Salmon.
